Whoever invented Taco Tuesday was a genius. After all, everyone loves tacos and what could be better than an excuse to eat more of them? I don't know about you, but I could never get enough tacos.
Now, I’m all for the traditional ground beef taco with lettuce, tomato, and cheese on it, the kind of the standard make-at-home tacos you see everyday. But sometimes I need something with flair, something that really pops. Something that combines everything amazing about Mexican food into one.
In comes these Steak Tacos with Corn Salsa. They combine perfectly marinated steak with cool pico de gallo, smooth avocado, and a spicy corn salsa. Taking a bite you get a little bit of each of these flavors and experience the contrasting tastes and textures from all of the amazing ingredients in it. Soft from the avocado, crispy from the corn and juicy from the pico de gallo.
It's basically like a fiesta in your mouth.

For the Steak And Corn Salsa
1Combine all ingredients for the steak in a resealable plastic bag. Set in the refrigerator to marinate for 3-4 hours.
2After marinating, prepare the corn salsa by combining all salsa ingredients in a bowl.
3Heat a pan over medium heat and place steak in the pan and cook to desired doneness.
4Remove steak to a cutting board and allow to sit for 3-5 minutes. Slice into strips.
For the Taco
1To assemble the tacos, fill tortillas with some steak, a spoonful of corn salsa, a spoonful of salsa and a slice of avocado. Garnish with cilantro if desired.
