Guacamole is an all-time favorite dip and side-dish. And, what ALWAYS goes well with this rich and flavorful treat is a heaping serving of crispy corn tortilla chips.

You may wish to make your own chips, but I often get store-bought tortillas, cut them up in wedges and crisp them up in the oven. Trust me, they're better that way. And when dipped in this guac, they'll taste like a little slice of heaven.

  • Yields: 4 Servings

Ingredients

4 small avocados, pits and skins removed

1/4 cup fresh lime juice

1/2 of a white onion, finely diced

2 large Roma tomatoes, finely diced

4 large cloves of garlic, minced or pressed

1/4 cup fresh cilantro, roughly chopped

1/2 tsp cayenne pepper or more to taste

1 tsp of fine sea salt, or more to taste

1 small avocados, pits and skins removed

Directions

1Start by placing the tomatoes, avocados, onions and garlic in a food processor. Blend for a few seconds until the avocados are chunky. You can also do this by hand by mashing the ingredients together in a large bowl.

2Add the fresh lime juice, cayenne, salt and cilantro and blend again. Make sure to adjust the seasoning.

3Transfer in a small airtight container and place in the fridge to chill or you can serve it right away with a plate full of tortilla chips.

This is a completely vegan version of guacamole, the blend is creamier on its own, but if you want a creamier texture, you can always add some soy-free vegan mayonnaise to the mixture.

Some people do not like adding tomatoes in their guacamole, you can make a batch with tomatoes and a batch without. This way, you will be able to cater to their food preferences as well.
