Some people go to Olive Garden for the salad and breadsticks. Might I suggest switching it up and getting soup and breadsticks as an intro before your main course instead? There are a few soups to choose from, but the most sophisticated among you would choose their creamy, decadent Chicken Gnocchi Soup (they forgive you for botching the pronunciation). It’s rich, aromatic, and packed with Italian flavor. The bite of the veggies with the soft, plump gnocchi makes for quite the enjoyable experience.
Now, imagine for a moment that you could enjoy this spectacular soup in the comfort of your own home. Even better, you get to choose how packed with goodies the soup is! You can follow the recipe exactly, or go lighter on the veggies but heavier on the chicken and gnocchi (my personal preference). Or maybe you want mostly broth? How you make it is up to you!
However you choose to spin it, you’ll most certainly enjoy this home-version of Olive Garden’s Italian classic.

1Heat butter and oil in large pot over medium heat. Add onion, celery, garlic, and carrots. Season with salt and pepper. Cook until tender (about 10 minutes).
2Sprinkle flour into pot while stirring vegetables. Cook 3 minutes.
3Stir in chicken broth gradually (one cup at a time).
4Stir in half and half.
5Add cooked chicken and bring to a simmer. Season with salt and pepper. Simmer for 20 minutes, stirring often.
6Cook gnocchi separately according to instructions on the package. Once fully cooked, add to the soup along with spinach. Simmer until spinach wilts. Stir in basil and serve.
7Top with grated parmesan.
