Nothing says summer like fresh fruit! And as good as fresh fruit is by itself, it's even better when added to your favorite dishes. The sugar content in fruit makes for a great glaze on meat. Peaches are especially good for glazing and chicken is the perfect vessel as it is quite the versatile meat.
This quick marinade combines delicious sweetness of the peaches with saltiness of soy sauce and the bite of apple cider vinegar. Toss in some garlic and ginger and you have the makings of a great glaze. Broiling the chicken with chunks of peach on top only creates even more tastiness as it offers some great caramelization.
Pair with a stir fry of your favorite vegetables and you have a healthy, protein packed dinner perfect for relaxing summer night.
1Pit, peel and smash one and a half peaches.
2Stir in soy sauce, brown sugar, ginger, apple cider vinegar, garlic and black pepper (to taste). It will be slightly chunky.
3Cut large boneless, skinless chicken breast into four even sections (not too thick). Place all pieces in peach marinade for at least 15 minutes.
4Spray foil-lined baking sheet with non-stick spray and place marinated chicken pieces a few inches apart.
5Top each chicken piece with more of the chunky marinade. Save some for later. Broil (on high) for 5 minutes.
6Flip pieces and top each with the rest of the marinade. Place back in the oven to broil for 5-7 minutes until chicken is cooked through and top has some caramelization.
7Remove from oven, serve and enjoy!
