Try this spin on traditional tuna salad for something a bit more exciting and flavorful – it’s healthy, filling, and extra delicious when served with crisp romaine lettuce on a toasted croissant!
For the Tuna
For the Dressing
1In a small bowl whisk together all the dressing ingredients: Greek yogurt, Dijon mustard, lemon juice, dried oregano, kosher salt, and black pepper.
2In a medium bowl combine all other ingredients: tuna, artichoke hearts, olives, red onion and parsley.
3Add the dressing to the large bowl and carefully fold all the ingredients together until fully combined, being careful not to crush the artichoke hearts and olives.
4Serve with your favorite toasted bread.
