A beautiful Japanese inspired salad that will leave your conscious guilt-free, your belly happy and your guests mistaking you for Nigella.

Ingredients

1 salmon wedge

1/2 cup pickled ginger

1/2 cup capers

1 lemon

6 small radishes

1 bag of rocket

salt and pepper

Directions

1The ingredient concoction sings for itself so all you have to worry about is the presentation.

2On a bed of Rocket, lay your sliced radishes, scatter your capers, and crumble your salmon wedge into hunks to disperse.

3Roll up your ginger before adding to the mix and gleefully throw in your edamame beans.

4Finish with a generous drizzle of lemon, salt and pepper.

5You now have a plate too pretty to eat - enjoy!
