Lightly toast each piece of bread in a toaster, using the lowest setting. Then generously butter both sides of each slice of bread. Make sure to cover the bread from edge to edge with butter.
Heat a large pan over medium high heat.
Put two slices of bread in the pan, allowing the bread to toast for 1-2 minutes. Flip the bread over allowing the other side to toast.
Put one slice of fontina on top of one slice of bread, and one slice of provolone on the other slice of bread.
Spread one tablespoon of pesto on top of one of the cheese slices, then top the pesto with slightly more than one tablespoon of sliced sun-dried tomatoes.
Put the sandwich together by topping the pesto and sun-dried tomatoes with the other slice of bread. Let the sandwich sit for a minute, flip, then let sit one more minute until the cheese is melted.
Repeat with the rest of the ingredients to make a second sandwich. Serve immediately.
