October 7, 2016
Who says grilled cheese is only for children? With this fun and easy recipe, grown ups can enjoy the tastiness of this childhood staple thanks a unique twist on the dish. That's not to say your kids won't enjoy this one, too, but with the addition of pesto and sun-dried tomatoes, it's certainly targeting an older crowd.
1Lightly toast each piece of bread in a toaster, using the lowest setting. Then generously butter both sides of each slice of bread. Make sure to cover the bread from edge to edge with butter.
2Heat a large pan over medium high heat.
3Put two slices of bread in the pan, allowing the bread to toast for 1-2 minutes. Flip the bread over allowing the other side to toast.
4Put one slice of fontina on top of one slice of bread, and one slice of provolone on the other slice of bread.
5Spread one tablespoon of pesto on top of one of the cheese slices, then top the pesto with slightly more than one tablespoon of sliced sun-dried tomatoes.
6Put the sandwich together by topping the pesto and sun-dried tomatoes with the other slice of bread. Let the sandwich sit for a minute, flip, then let sit one more minute until the cheese is melted.
7Repeat with the rest of the ingredients to make a second sandwich. Serve immediately.
