For the bread pudding
Preheat the oven to 350 degrees F.
In a large mixing bowl, add the eggs, milk, half and half, white and brown sugars, vanilla, cinnamon, and kosher salt. Carefully whisk together until combined and eggs are broken up.
Spray a 9x13 baking dish with nonstick cooking spray. Line the dish with the halves of each croissant.
Sprinkle the raisins and pecans on top, then cover with the top halves of the croissants (brown side up).
Pour the liquid mixture over bread. Using your hands, lightly push down on the croissants so it can soak up as much of the liquid as possible.
Bake for 35-40 minutes, until the croissant springs back when you push on it.
While the bread pudding bakes, make the caramel sauce by heating a small sauce pan over medium heat.
Add the butter, brown sugar, and milk. Turn heat up to medium high and bring to a boil, making sure to stir constantly for 2-3 minutes.
Once the sugar is dissolved, take it off the heat. Add the vanilla, baking soda and salt and stir to combine (the baking soda makes the sauce slightly thicken and foam up).
When the bread pudding is done, remove from oven and cool for at least 10 min before serving.
Serve the bread pudding warm (or at room temperature) with a spoon of hot caramel sauce on top.
