Looking for a quick and easy waffle recipe to put together on Sunday mornings when the family comes down for breakfast? These Cinnamon Belgian Waffles should do the trick. Fluffy, soft and covered in all your favorite toppings, they're sure to put a smile on the face of whoever's lucky enough to be indulging in them.
1Turn your waffle iron on and let it warm up. Spray with nonstick spray.
2Combine all the waffle ingredients (except for the Belgian pearl sugar) in a large mixing bowl: pancake mix, cinnamon, baking powder, baking soda, eggs, milk, and vanilla extract. Mix on medium speed using a hand mixer or stand mixer until well combined (about 10 seconds).
3Add Belgian pearl sugar and fold into the waffle batter with a spatula.
4Using a ladle, add batter to the waffle iron. Close the lid and allow to cook until light golden brown (around 2 to 2 ½ minutes per waffle).
5Transfer cooked waffles to a cookie rack. Repeat until all batter has been cooked.
6Serve immediately with your favorite toppings.
