No matter how healthy you try to eat, everyone craves a little comfort food from time to time. And for me, comfort food usually means carbs or French fries! I love ordering loaded French fries or nachos at a baseball game in the summer months, so I wanted to come up with a fun spin on a classic comfort food for this recipe.
Thankfully, these Chili & Cheese Sweet Potato Tots are exactly that. Each component of this dish is delicious enough to eat on its own, but together, they're pure magic

1Preheat oven to required temperature for the frozen tots (follow instructions on packaging).
2Start on chili by heating the olive oil over medium high heat for 1 min in a medium saucepan. Add the onions and garlic.
3Sauté, stirring occasionally 3-4 min.
4Add the ground beef and cook or another 3-4 minutes, until it starts to brown.
5Add the tomato paste and stir to combine. Then, add all the spices (chili powder, chipotle chili pepper powder, sugar, cumin, paprika, kosher salt & pepper) to the meat; stir well to combine.
6Add the beef broth and beer, stirring all the ingredients together.
7Put the heat on low and partially cover the saucepan with the lid. Simmer for 15-20 minutes, allowing the liquid to reduce.
8While the chili simmers, put the tots in the oven and cook according to instructions.
9Then prepare the cheese sauce by adding the Velveeta and RoTel tomatoes and green chilies to a small sauce pan and set over medium heat.
10Stir occasionally until fully melted and combined, about 5-7 minutes.
11Serve immediately by smothering the tots with some chili, cheese sauce, and a sprinkle of green onions.
