I'm a self-confessed breakfast lover. I can never go a day without having a real hearty meal in the morning, one which usually includes eggs to keep me energized and pumped. No matter how busy I am or how difficult the situation is in the kitchen, I'll always have breakfast.

That being said, I remember one morning I planned to make egg muffins for breakfast and my oven decided not to work. I thought about steaming them, but they wouldn’t have that crisp and smoky taste that I wanted. Thankfully, I looked out and saw the answer to my problems waiting for me on the porch. I decided to cook the muffins in my pellet grill. It might not sound too conventional, but it produced these incredible breakfast snacks and saved me from what could have turned out to be a rough morning.

  • Yields: 6 Servings

Ingredients

1 tbsp extra virgin olive oil

6 large organic eggs

4 stalks of scallions, chopped

1 medium red bell pepper, cut into small cubes

1/4 cup rozen mixed vegetables (peas, carrots and corn)

1/4 cup diced ham

1/2 tsp fine salt or less

1/4 tsp freshly cracked black pepper

Pinch of garlic powder

1/4 cup grated low-fat or regular cheddar cheese

Non-stick cooking spray

Directions

1Preheat and fire up your grill to medium to high heat. Grease your 6-cup muffin tin with non-stick baking or cooking spray and set aside.

2In a large bowl, beat the eggs and then add the rest of the ingredients, except for the cheese.

3Fill each greased muffin cup with the egg mixture, about ¾ of the way.

4Top with the grated cheese and place the tin on the grill.

5Place the lid or cover on and grill for about 5 minutes or until the cheese is melted and the eggs are done.

You can also mix in half of the grated cheese in with the rest of the ingredients and use the other half as topping for a cheesier taste.

Mushrooms, bacon, spinach and chopped onions are also great additions or substitutions for the ingredients listed above.
