Have you ever tried Mac and Cheese on a Pizza before? I had it once at a Pizza buffet and have been totally obsessed ever since. Seriously, it's a game changer.
This dish takes thee ooey gooey greatness of mac and cheese and combines it with the crispy crumbly bacon and a hot Pizza - bringing the three together for one knockout dish!
Trust us, once you take your first bite, you'll never go back to regular pizza ever again.
For the Bacon
1Place a large skillet over medium heat. Once heated, add bacon and allow to cook until brown and crispy on each side.
2Turn off heat, remove bacon to a plate lined with paper towel and allow it to cool and drain.
3Once cool, crumble bacon and set aside. Drain all but 2 tbs of bacon fat from the skillet.
For the Mac and Cheese
1Bring a pot of water to a boil.
2Once boiling, add in ¾ tsp salt and the Cavatappi noodles and cook according to package directions.
3Once cooked, drain noodles and set aside.
4Turn heat to medium low on the skillet used to cook the bacon. Once warm, add in the flour and whisk constantly for 1-2 minutes until thickened.
5Slowly add in milk, whisking constantly. Allow to cook for one minute or until milk has thickened.
6Add in 1 cup cheddar, ½ cup mozzarella, ½ tsp salt, and ½ tsp pepper. Whisk until cheese is melted and smooth.
7Turn off heat. Add drained noodles to the skillet and toss gently in the cheese sauce so that all noodles are coated.
For the Pizza
1Preheat oven to 450F.
2If using a pizza round, place pizza on the round. If not, assemble pizza on a cutting board or on the counter.
3Top pizza with prepared macaroni and cheese (you may not need to use all of the noodles on the pizza. Use just enough to cover the pizza, leaving about 1” on the outside for the crust).
4Sprinkle remaining ½ cup cheddar cheese, 1 tbsp mozzarella, and 2 tbsp parmesan on the pizza.
5Top with reserved bacon crumbles.
6Place pizza in the preheated oven on the pizza round or directly on the oven rack and allow to cook 7 - 10 minutes or until the cheese is melted and golden.
7Cut into slices and serve.
